Job Description

Potential candidates must have at least 3 years experience in a high-volume four or five star hotel, resort and at least 1 year on a cruise ship.
 You must be fully vaccinated with FDA or WHO approved Covid-19 vaccines and must be fluent in English. Joining Ticket, Medical and Visas are provided.

  • The Pastry Chef is responsible for the service, standard and quality of all dishes and food products produced within the pastry and bakery sections, in accordance with company corporate menu cycles.

  • The Pastry Chef is responsible for the service, standard and quality of all dishes and food products produced within the pastry and bakery sections, in accordance with company corporate menu cycles.
  • Comprehensive knowledge of pastry techniques and skills.
  • Prepare a wide variety of goods such as cakes, cookies, pies, bread etc. following traditional and modern recipes
  • The Pastry Chef should create new and exciting desserts under the direction of the Executive Chef to renew our menus and engage the interest of guests.
  • Monitor stocks for baking ingredients such as flour, sugar and such, and make appropriate orders to replenish stocks.
  • The Pastry Chef must manage, monitor, develop and train members of the team to ensure the provision of high quality, professionally prepared food products.
  • Effectively manage own area, ensure adequate resourcing of team, complete appraisals identifying development opportunities and provide guidance, motivation and direction as required.
  • Liaise with the Chef de Partie to confirm the daily menu requirements and discuss the daily working processes of the team.
  • The Pastry Chef should have knowledge of Gluten free pastries and aware of different allergies.
  • Effectively monitor and manage costs and resources within own area and inform the Chef de Cuisine of any issues immediately. The Pastry Chef will complete regular inspections and update food safety logs accordingly. The Pastry Chef must ensure the section and equipment is operated and maintained in a sanitized and clean state at all times, undertaking regular inspections.

Requirements

  • Good knowledge of the English language.
  • At least 3 years’ experience in a quality bakery and familiar with several baking techniques and working with different flours, at least 1 year on a cruise ship.
  • Must be fully Covid-19 vaccinated with FDA or WHO approved Covid-19 vaccines.

Summary:  As a Pastry Chef you should provide both skill and creativity in the kitchen.  You need to be able to execute various levels of baking skills. As a professional you should have a keen attention to.
